4-Ingredient Samoa Cookies

I cannot take credit for this recipe at all, as I saw @gracefulwellness post about a holistic take on girl scout cookies, but I had to post my version of that recipe because they were just so so good.


These took about 15 minutes to prepare, but I think I ate them in a total of 35 seconds. These are the perfect post-dinner sweet treat or pre-workout snack with minimal ingredients that won't leave you feeling like crap. Full of natural sugar and fiber, these are guaranteed to be a staple for you and your kids! Andiamo!




INGREDIENTS:

serving size: around 6 medium-sized cookies

  • 15 pitted organic medjool dates

  • 1 cup organic coconut flakes

  • 1 cup sugar-free dark chocolate melting chips

  • 1 teaspoon of organic coconut oil (to melt the chocolate chips)

  • Optional: sprinkle of maldon flaky sea salt



DIRECTIONS:

  1. In a food processor, add your pitted dates. Blend until they turn into a thick paste.

  2. In a small saucepan, add your coconut flakes and toast on medium-low until golden brown.

  3. Add your date paste and toasted coconut flakes in a large bowl and well-combine.

  4. Microwave your chocolate chips in the microwave, in 30-second intervals, with your teaspoon of coconut oil. Instead of using the microwave, you can always heat your chocolate chips in a glass bowl over a pan on the stove.

  5. Roll your date and coconut paste into small balls and flatten on a piece of parchment paper. Then, drizzle your melted chocolate on top and add flaky sea salt.

  6. Freeze for 10-20 minutes before serving and enjoying. Buon Appetito!
