High-Protein Banana Bread

Over Christmas break, I had the baking itch and wanted to spend some time creating some high-protein healthy recipes. Safe to say… it was a success!!
If your overripe bananas and your protein powder are teaming up and staring you in the face, begging you to use them, this is the recipe for you. Perfect for breakfast, a snack, dessert, or to bring to an event, you’ll have people asking how you were able to make something so healthy yet so tasty. Andiamo! 🍌🍞🍯
INGREDIENTS:
3 overripe bananas, mashed
2 whole room temperature eggs
1/3 cup organic maple syrup
1/2 cup plain A2 greek yogurt
1/2 tsp pure vanilla extract
1.5 cups organic all-purpose flour
1 scoop @levels double chocolate protein powder
1/2 tsp baking soda
1 tsp (or eyeball) of cinnamon
Sprinkle of flaky @maldon sea salt
4 tablespoons grassfed butter, melted
Optional mix-ins: chocolate chips, nuts, dates, nut butter, coconut, etc
DIRECTIONS:
Preheat your oven to 350 degrees Fahrenheit.
In a large bowl, mash your 3 overripe bananas. Then, crack 2 eggs, add your Greek yogurt, maple syrup, and vanilla extract. Combine and mix well.
Then, it’s time for the dry ingredients. Add your baking soda, flour, cinnamon, and a sprinkle of sea salt. Mix again until the batter is formed.
This is where you add your toppings of choice. I added a sprinkle of chocolate chips, but you can add nuts, peanut butter, white chocolate chips, dates, etc.
Add your 4 tablespoons of melted butter and mix into your batter for the final time.
In a parchment lined or greased baking tin, add your banana bread batter, make sure it’s even, and set to cook at 350 degrees for 40-45 minutes.
When done and cooked to your desired color, remove from heat and let sit for at least 20 minutes before slicing and serving. Buon appetito!
