Turkey Omelette and Home Fries

Breakfast by far is my favorite meal of the day. There is no denying that it is so important to start your day off with a nice, nourishing, full meal, especially when you have a busy day ahead. After I work out in the morning, there is nothing more I look forward to then digging into my breakfast!


I usually stick to a very similar breakfast which consists of two slices of whatever toast I am currently buying, eggs and egg whites, some kind of protein like turkey bacon or chicken breakfast sausage, and a delicious coffee. But sometimes I like to switch it up so that I don't start to get tired of those same foods and want to go off track. This breakfast was a little more time consuming because of the potatoes, but the taste was completely worth it and it was the perfect post-workout meal!





MACROS:

CALORIES: 387 calories

PROTEIN: 42.1 grams

CARBOHYDRATES: 31.8 grams

FAT: 10.3 grams


INGREDIENTS:

- 169 grams russet potato, weighed raw

- 4 ml olive oil

- 1 whole egg

- 100 grams egg whites

- 2.68 ounces deli sliced turkey

- 14 grams fat free shredded cheddar cheese


DIRECTIONS:

  1. Preheat your air fryer to 400 degrees.

  2. Wash and dry your potato and slice into small squares. Pat dry to get out any extra moisture. Season with olive oil, salt, pepper, paprika, garlic powder, and parsley, and set aside.

  3. In a foil-lined air fryer tray, throw in your potatoes and cook at 350 degrees for about 10 minutes. After 10 minutes, open, toss the potatoes around, and cook for an additional 3-5 minutes on 450 or max crisp, based on your preference.

  4. In a small bowl, whisk together one egg and 100 grams of egg whites and season with salt, and add a little drop of water for extra fluffiness.

  5. In a sprayed pan, throw in chunks of deli turkey and let cook for about 2 minutes. Seasoning is optional since the turkey itself has good flavor.

  6. Once the turkey chunks have a nice cook to them, add your scrambled egg mixture and cook accordingly.

  7. Before flipping the omelette, add 14 grams of shredded cheddar cheese and continue to cook omelette until the cheese is nice and melted.

  8. Plate your omelette alongside your crispy potatoes, and serve with toppings of choice, like hot sauce or ketchup, and enjoy!
