Single-Serve Apple Crumble

Anything with apple is my favorite dessert, and it doesn't matter that it's springtime.
I always have apples in the fridge because they're a great satiating snack, a great source of fiber, and easy carbs when I am behind on my macros. Using them for this purpose is just an added plus.
Sometimes, you need something warm and tasty, but not too heavy to end the night, and this is definitely the recipe for that!

MACROS:
CALORIES: 279 calories
PROTEIN: 16.7 grams
CARBOHYDRATES: 30.4 grams
FAT: 10.4 grams
INGREDIENTS:
- 115 grams pink lady apple
- 12 grams french vanilla whey protein
- 14 grams instant oats or oats of choice
- 20 grams all natural peanut butter
- cinnamon
- sweeteners of choice: I used stevia and sf pancake syrup
DIRECTIONS:
Preheat your oven to 350 degrees Fahrenheit.
Chop your apple of choice into small little squares and set aside.
In a pot over medium heat, add a little cooking spray and then your apples. Add cinnamon, sugar free syrup, stevia, a splash of water, and a pinch of sea salt. Let simmer and cook until soft.
For your crumble: in a bowl, add 14 grams of oats and 12 grams of vanilla protein powder. Add syrup, cinnamon, and more stevia if necessary until it turns into a crumbly, granola-like consistency.
In an oven-safe ramekin, add your stewed apples and top with your oat mixture. Bake until golden brown for about 20 minutes.
Serve with a drizzle of all natural peanut butter and enjoy!
