Simple Apple Crisp

With lots of time on my hands recently, I've been feeling this urge to create unique recipes and sharpen up my old ones. With Christmas coming up, now is as good of a time as ever to start honing those recipes.


I've recently started the ketogenic diet to help address my recent epilepsy diagnosis, which means that I CANNOT enjoy this apple crisp myself, but based on the smell of it baking and my family's opinions of it, I can say it was a hit.


The other day, my dad said these honey crisp apples he bought weren't as good as he expected, and they were a waste of money. So, instead of letting them go brown and get thrown out, I figured: why not make a tasty dessert out of them?


So that's exactly what I did, and I am SO glad that I did that. Because it came out incredible, it was super easy, and for just under 100 calories for 1/12 of the recipe, you can have even 3 servings and still stay within your caloric deficit.


Feel free to tweak and adjust the recipe, just as i did, and don't forget the yummy toppings (vanilla ice cream and homemade whipped cream are the best in my opinion). :)





MACROS:

FOR 1/12 OF THE APPLE CRISP, WITHOUT ADDITIONAL TOPPINGS

CALORIES: 84 CALORIES

PROTEIN: >1 GRAM

CARBOHYDRATES: 16.5 GRAMS

FAT: 2.5 GRAMS


INGREDIENTS:


FOR THE APPLE FILLING

  • 5 large honey crisp apples, or whatever ripe apples you have on hand

  • 1 tablespoon freshly squeezed lemon juice

  • 1/2 teaspoon pure vanilla extract

  • 1 tablespoon corn starch

  • 1/2 teaspoon organic ground cinnamon

  • 1 teaspoon organic stevia


FOR THE CRISP TOPPING

  • 3/4 cup organic old fashioned oats

  • 2 tablespoons sugar replacement of choice (allulose, stevia, monkfruit sweetener, etc)

  • 1 teaspoon organic ground cinnamon

  • 1/2 teaspoon pure vanilla extract

  • 1/4 stick of grassfed unsalted butter


DIRECTIONS:

  1. Preheat your oven to 375 degrees Fahrenheit.

  2. Peel, core, and cube your apples evenly and place in a large mixing bowl. Then, add your corn starch, cinnamon, lemon juice, stevia, and vanilla extract. Mix well and transfer to a buttered baking tray.

  3. For your crispy oat topping, mix your oats, cinnamon, vanilla extract, and sugar replacement in a bowl and well combine. Melt your butter and pour into the dry mix. Combine and mix well with your hands to get the mixture well combined.

  4. Add your oat crumble evenly on top of the apple mixture and make sure every corner is covered with the oat crumble.

  5. Bake at 375 degrees uncovered for about 35-40 minutes. When ready to eat, serve with vanilla ice cream, homemade whipped cream, and toppings of choice, and enjoy :)
