Shrimp Taquitos

Another lent-friendly or non-meat eating meal that I am absolutely IN LOVE WITH. I came home for the weekend and I was thinking of ways to get my protein in without eating meat, and while I was reluctant about how taquitos would be with shrimp, I am so glad they tasted so delicious.

MACROS:
*macros don't include side of pico de gallo*
CALORIES: 410 calories
PROTEIN: 39.7 grams
CARBOHYDRATES: 35.3 grams
FAT: 11.3 grams
INGREDIENTS:
- 4 extra thin corn tortillas
- 8 ounces colossal shrimp, peeled and deveined
- 28 grams reduced fat shredded mexican cheese
DIRECTIONS:
Preheat your oven or air fryer to 400 degrees Fahrenheit.
Season your shrimp and cook to your liking. Set aside.
Warm up your tortillas in between two wet paper towels on a microwave-safe dish for about one minute to get them more pliable and easy to roll.
Chop your shrimp and portion out your cheese and shrimp evenly among your tortillas. If the taquitos are not staying folded, put toothpicks where the fold is and secure them.
Spray with cooking spray and bake for about 10-15 minutes, rotating halfway.
Serve with hot sauce, lime, pico de gallo, and whatever toppings you want.
Not going to lie, my parents were hovering over me as I was eating them because they smelt so good and looked so good. Definitely should try these if you cannot eat meat or even if you want to switch things up a bit!
