I am obviously on a pumpkin kick right now, and I'm not complaining. This time of the year is the best for desserts, whether it's apple, pumpkin, or brown sugar cinnamon flavored. But why not make high-protein versions while still getting the taste of fall?
Once you open that can of pumpkin, you have to come up with a million recipes so it doesn't go to waste, and that's what I did. If you've been following the blog, I've posted recipes for pumpkin baked oats, a pumpkin spice protein shake, and a single-serve pumpkin chocolate cake (these were all amazing but especially the baked oats). Go check those out if you haven't, and enjoy this new recipe!

MACROS:
CALORIES: 196 calories
PROTEIN: 25.3 grams
CARBOHYDRATES: 23.9 grams
FAT: 1.6 grams
INGREDIENTS:
- 170 grams plain nonfat greek yogurt
- 61 grams all natural pumpkin puree
- 1/4 package of sugar-free vanilla pie powder
- 15 grams vanilla protein powder of choice
- cinnamon and pumpkin pie spice
- 2 tablespoons sugar free pancake syrup
- vanilla extract and sweetener to taste
DIRECTIONS:
In a bowl, mix your greek yogurt, pumpkin puree, vanilla powder, protein powder, sugar free syrup, cinnamon, pumpkin pie spice, and whatever other flavorings and sweetener of choice until well combined. I used Pumpkin Spice Latte coffee syrup as an additional flavor in my bowl, and it was so good!
Plate and serve with toppings of choice: I chose caramel rice crisps (not included in macros!)
