Mediterranean Turkey Meatballs

It's easy to get bored when meal prepping and tracking macros. Constantly seasoning your meat a certain way gets repetitive, and it's nice to switch things up to prevent burnout and deviating from plan.


These turkey meatballs are a first, but definitely not a last, and certainly what I needed to switch up my meals. The meatballs took less than 15 minutes to cook and we're perfectly tender and crispy.


Toppings are the best way to add flavor and variety to a meal, and I served the meatballs with a lemon parsley jasmine rice, sauteed zucchini, cucumber and tomato salad, kalamata olives, avocado, and a homemade tzatziki sauce!





MACROS (for entire plate):

CALORIES: 555 calories

PROTEIN: 46.8 grams

CARBOHYDRATES: 57.3 grams

FAT: 15.7 grams


INGREDIENTS:

- 5 ounces 99% lean ground turkey, weighed raw

- 150 grams jasmine rice, weighed cooked

- 65 grams nonfat plain greek yogurt

- 1 mini cucumber, grated

- 15 grams kalamata olives

- 75 grams fresh avocado

- 65 grams chopped cucumber (not tracked)

- 180 grams zucchini, weighed raw


DIRECTIONS:

  1. In a bowl, season the turkey meat with salt, pepper, garlic powder, dill weed, chili powder, oregano, and thyme. Thoroughly combine the seasonings evenly.

  2. With damp hands, take a teaspoon-sized amount of meat and roll into even sized meatballs. 5 ounces of turkey (weighed raw) yielded seven small meatballs.

  3. In a separate bowl, mix 65 grams nonfat plain greek yogurt with juice of a quarter of a lemon, grated cucumber, salt, pepper, garlic powder, parsley, and dill weed. Let sit in the fridge for at least an hour to well-combine flavors.

  4. In a sprayed foil-lined tray, air fry your meatballs at 380 degrees for 10 minutes. Shake the basket and air fry for another 2-4 minutes depending on desired crispiness.

  5. In a pan, saute your zucchini with seasonings of your choice. I used salt and pepper. Set aside.

  6. Now to plate: rice, meatballs, zucchini, cucumber and tomato salad, olives, avocado, and your homemade tzatziki drizzled on top. Enjoy!
