A lot of people tend to neglect breakfast due to busy schedules and time constraints. But breakfast is undoubtedly the most important meal of the day: it energizes you, it fuels you, an it sets the tone for the rest of your day. Neglecting your first meal of the day and foregoing a high-protein, satiating breakfast will almost guarantee being ravenous.

This was so easy, so quick, and reheats very well. If you're on the go, this will keep you full and energized to go through your day.

INGREDIENTS:

- 1 plain bagel, lightly toasted

- 2 slices uncured turkey bacon

- 1 whole egg

- 120 grams egg whites

- 20 grams shredded cheese

DIRECTIONS:

  1. In a bowl, scramble your egg and egg whites. Add salt and a little bit of water to fluff up your scrambled eggs.

  2. In a pan over medium heat, cook your turkey bacon until desired crispiness. Remove from heat and blot when done.

  3. In a pan over medium to low heat, pour your egg mixture and sprinkle your shredded cheese. Cover and let cook.

  4. After about 2 minutes, uncover and move your egg mixture around and let the liquid coat the sides of the pan to evenly cook the mixture.

  5. When cooked through, fold twice so the "omelette" is smaller and fits on the bagel.

  6. Now, to assemble: bagel, egg, turkey bacon, and extra shredded cheese, and voila!
