Funfetti Baked Oats

Funfetti cake is one of the greatest sweets on earth. I absolutely love anything funfetti, birthday cake, vanilla and sprinkle flavored. These oats, while not exactly a piece of funfetti cake with vanilla icing, is no exception to that rule.


I also love oatmeal, and lately there has been a baked oats craze on TikTok. Rather, there is this craze to redefine how people view oatmeal as a breakfast food. A lot of people do not enjoy the texture of oatmeal or see it as a boring, unfulfilling, and almost "elderly" breakfast choice. But social media trends of baked oats, oatmeal cookie skillets, oatmeal pancakes, and a plethora of other recipes are happily altering this narrative.


I've seen variations of this recipe on TikTok and I just had to attempt my own version of this sweet treat. I've tried numerous recipes involving oats, included protein overnight oats and banana oat pancakes, and while they're good, they are just not great. The texture is always grainy, the milk to oat ratio is always imbalanced, and the overall taste is missing something that elevates it from plain, old oatmeal to something actually delicious. But this is probably the first special oatmeal recipe that I not only like, but LOVE. These funfetti baked oats are perfectly sweet, delicious, fun to make, and perfect for any meal.





CALORIES AND MACROS:

CALORIES: 245 calories

CARBOHYDRATES: 36.2 grams

FAT: 6 grams

PROTEIN: 15 grams


INGREDIENTS:

  • 1 packet instant organic oatmeal

  • 1/2 cup unsweetened almond milk

  • 1 scoop vanilla protein powder of choice

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon pure vanilla extract

  • 2 tablespoons sugar-free syrup

  • 1 teaspoon sprinkles


RECIPE:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. In a blender, combine all of the ingredients listed above, with the exception of the sprinkles, which will be added last. Blend until a thick, batter-like consistency is achieved.

  3. Pour batter into oven-safe ramekin and place into the oven for about 20-23 minutes. For a gooey center, 20 minutes is sufficient, but for a creamy, cake-like center, 23 minutes is recommended.

  4. The dish does not need any toppings, as it is already sweet, but feel free to top with sugar-free syrup or greek yogurt.


CLOSING

This is the perfect sweet treat for breakfast, dessert, or whenever you're craving that funfetti cake. Of course, I think we would all prefer a slice of funfetti cake but I find that this recipe is not only filling and protein-packed, but I almost always have all of these ingredients in my pantry.
