Who said Valentine's Day wasn't about self-love?
I unfortunately had my three-hour night class on Valentine's Day, but decided to make myself a cutesie little macro-friendly valentine's day treat all for myself.
I love having kodiak cakes on hand whenever I need the extra carbs and protein for a macro cap. I didn't feel like making smaller pancakes so I made one giant one and it was honestly so much better that way. I would say this recipe yields about 4-5 medium sized pancakes.

MACROS:
CALORIES: 375 calories
PROTEIN: 44.3 grams
CARBOHYDRATES: 38.9 grams
FAT: 7.1 grams
INGREDIENTS:
- 40 grams kodiak pancake mix
- 30 grams protein powder of choice (i used legion french vanilla)
- 70 grams egg whites
- 80 milliliters unsweetened almond milk
- 16 grams lily's sugar free dark chocolate chips
- strawberries to top
- sprinkle of cinnamon
- sugar free pancake syrup
DIRECTIONS:
In a bowl, mix all of your dry ingredients: kodiak mix, protein powder, and a dash of cinnamon.
Add your wet ingredients incrementally and whisk until you meet your desired consistency.
In a sprayed pan over medium-low heat, add your batter and let cook. About one minute before flipping, add your chocolate chips.
Plate and serve with your favorite toppings, and enjoy!
