Chocolate Chip Oat Banana Bread

A universal experience that we all seem to have is having too many ripe bananas and not enough plans for them. We all buy bananas, thinking we're gonna eat one a day, and then we never end up doing that.
Another universal experience we have is wanting a delicious warm sweet treat, especially around the holidays, without derailing our progress or eating "bad" ingredients. I have a solution for both of those frequently-occurring issues.
I made this for my family and it was such a hit. It was gooey, warm, tasty, and resourceful, and finally got those brown bananas out of the fruit basket and out of sight.
You can freestyle this recipe however you want. You can use a different flour, pumpkin instead of banana, different toppings and mix-ins instead of chocolate chips, but, regardless, this was so simple and easy!

INGREDIENTS:
3 medium extra ripe bananas
2 large white eggs
100 grams egg whites
2 cups steel cut, gluten and glyphosate free oats (or oat flour/flour of choice)
30 grams HU Kitchen dark chocolate
2 tbsp pure organic maple syrup
1/2 tsp baking powder
1 tsp vanilla extract
1/2 tsp organic ceylon cinnamon
Sprinkle of Maldon sea salt

DIRECTIONS:
Preheat your oven to 350 degrees Fahrenheit.
If using oats and not oat flour, blend 2 cups of oats in a blender until well blended into a fine flour consistency.
In a big mixing bowl, mash your 3 overripe bananas completely.
To the bananas, add your 2 eggs, 100 grams of egg whites, and your vanilla extract. Mix and well combine before adding your dry ingredients.
Slowly add in your oat flour and mix well. Then, add your baking powder, cinnamon, and sprinkle of maldon salt.
This is optional, but add your chopped dark chocolate to your batter and incorporate thoroughly. Add extra later on top for good measure :)
In a loaf pan lined with parchment paper, slowly pour in your banana bread batter. Once the batter is settled into the loaf pan, add more chocolate chunks atop and another sprinkle of salt.
Place in the oven and bake your loaf for 35-40 minutes. I did the toothpick test to make sure the batter was cooked fully through. Slice, serve and enjoy <3
