Cast-Iron Beef and Zucchini Frittata

Since I’ve been trying intermittent fasting to try and conquer food noise and also treat my epilepsy, I’ve been needing super high protein meals during my eating window to help me reach my goals. And while it may not be optimal to save all of your calories for one to two meals a day, I have found intermittent fasting extremely effective in managing hunger levels and energy levels.


The only downside, however, is making sure I’m reaching my macronutrient and micronutrient goals. So, last night, I needed to find something fast, hearty, but also heavily oriented around protein. This recipe did just the trick and left me SO full… this will definitely be on rotation.


The allure of this recipe is that you can virtually use any variation of ingredients. Would rather use spinach than zucchini? Go right ahead! Want to use ground chicken or sausage instead of beef? Knock yourself out! All I ask… is that you at least try this recipe, because you will surely not be disappointed. Andiamo a mangiare!

MACROS:

CALORIES: 694 calories

PROTEIN: 92 grams

CARBOHYDRATES: 5 grams

FAT: 34 grams


INGREDIENTS:

  • 4 large eggs

  • 300 grams egg whites

  • 4 ounces grassfed beef, weighed cooked

  • 150 grams diced zucchini

  • Salt and Pepper

  • 3 tablespoons grated pecorino romano cheese


DIRECTIONS:

  1. Preheat your oven to 400 degrees Fahrenheit, and grease a large cast-iron skillet.

  2. In a large mixing bowl, whisk together your eggs and egg whites. Season to your liking; I just used salt and pepper.

  3. Diced your zucchini (about half of a medium-large zucchini) into quarter pieces. You can precook, but I threw them in the mixture raw and enjoyed the texture of them.

  4. To your eggs, add 4 ounces of precooked ground beef or protein of choice (you could use ground sausage, bacon, pork, etc.) and your zucchini.

  5. Add your grated cheese to your egg mixture and whisk one more time to well-combine your eggs, beef and zucchini.

  6. Pour the mixture into the greased cast-iron skillet, and place in the oven to cook for 20-25 minutes at 400 degrees Fahrenheit.

  7. Once your frittata is cooked to your liking, remove from the oven and top with whatever garnishes you like. I used chopped green onions. Buon Appetito!
