Buffalo Chicken Taquitos

My favorite thing ever is walking into a casual restaurant and smelling the buffalo wings and all the fried foods just permeate the air. Sometimes, you need some greasy food to just close out the weekend. Well, we can do that without going over your calories if you're serious about tracking.


The classic buffalo chicken dip uses rotisserie chicken or whatever chicken you have on hand, cream cheese and maybe some sour cream, buffalo sauce, ranch seasoning and other seasonings of choice, and some chips on the side. We are going to modify this recipe with lower-calorie, higher-protein options to make this even more delicious, satiating, and part of your regular recipe book! If you want to just make this dip and make homemade healthier chips to mimic your buffalo chicken dip and chips that you have at parties, you can always do that. But these hit that really filling meal craving!





MACROS

- CALORIES: 578 CALORIES

- PROTEIN: 70.2 GRAMS

- CARBOHYDRATES: 64 GRAMS

- FAT: 22.4 GRAMS


INGREDIENTS:

- 3 carb balance tortillas

- 5 ounces chicken breast

- 170 grams plain nonfat greek yogurt

- 28 grams shredded cheese of choice (I used mexican blend)

- 1 tablespoon ranch seasoning packet

- buffalo sauce (amount ranges on preference)


DIRECTIONS:

  1. Shred your cooked chicken breast thinly and put aside.

  2. Preheat your air fryer at 400 for 3 minutes.

  3. In a big mixing bowl, place half of your greek yogurt (85 grams) and chicken and mix thoroughly.

  4. After well combined, add your seasonings and cheese of choice. Mix until combined again.

  5. Once your air fryer is heated, evenly distribute your buffalo chicken dip mixture among 3 tortillas and spread. Roll up without folding in the edges and place the seam on the bottom.

  6. Spray with cooking spray and air fry at 400 degrees for around 10-15 minutes, flipping halfway for an even crisp. When flipping, respray the other side.

  7. While your taquitos are cooking, mix the rest of your leftover greek yogurt and add about 2 teaspoons of ranch seasoning, adding a little water to thin it out to your liking and maybe some garlic powder for extra flavor.

  8. Serve your taquitos with your homemade ranch on the side and enjoy!


This was such a great meal and I was shocked at how high in protein it was. That first bite of crunchy tortilla with that buffalo dip oozing out was nothing short of amazing. I always say this, but my favorite part of this journey has been creating meals and eating foods that don't make this feel like a diet, but like an entire sustainable lifestyle change. These are the kind of meals that will make your progress last! I hope you guys enjoy this one as much as I did!
