Breakfast Tostadas

I very rarely deviate from my normal breakfast of eggs and egg whites, turkey bacon or chicken sausage, and a bagel. But, even I like to switch things up once in awhile.


I've come up with like 3 different tostada recipes this week because I have so many corn tortillas. When I write recipes, I very rarely intentionally buy ingredients for them, but make them up out of what I do have and decide to pick up at the grocery store.


This was surprisingly a quick breakfast, the most time consuming part being waiting for the oven to heat up.


The pepper jack cheese gave the tostadas a little kick and really played into the tex-mex vibe of this breakfast. Definitely try this out if you want to switch things up a bit!





MACROS:

CALORIES: 543 calories

PROTEIN: 37.9 grams

CARBOHYDRATES: 34 grams

FAT: 28.4 grams


INGREDIENTS:

- 3 corn tortillas

- 1 whole egg

- 100 grams liquid egg whites

- 55 grams mashed avocado

- 3 chicken breakfast sausages

- 1 slice pepper jack cheese


DIRECTIONS:

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Lay your tortillas out on a sprayed, foil-lined baking tray. Spray on top, sprinkle a little bit of salt, and bake at 400 degrees for about 12-14 minutes.

  3. While your tortillas, cook your eggs and chicken sausage according to preference.

  4. Once your tortillas are done and all of your toppings are finishing up, it's time to assemble: avocado spread first, scrambled eggs, chicken sausage, and cheese.

  5. Throw the tostadas back into the oven to broil for about 2-3 minutes.

  6. When out of the oven, serve with hot salsa and enjoy!
