Animal-Based Pancakes

I am going to be the first to admit that I was skeptical to try the animal-based pancakes that everyone has been making. And while you can't see how badly I failed at making the first two pancakes (they are buried under the pretty ones), they tasted actually incredible. And what was even better was knowing that they were made with only single ingredients.
I would definitely make these again and you can be creative with what you choose to add. Whether it's pure dark chocolate, other fresh or frozen fruit, or leaving them plain, they're a great breakfast option alongside some eggs, ground beef, chicken sausage, etc. Hope you guys enjoy just as much as I did! :)

INGREDIENTS:
2 eggs, scrambled
1 medium to large banana, mashed
To taste: pure vanilla extract, organic ground cinnamon, sea salt
Optional mix-ins: frozen organic blueberries
DIRECTIONS:
In a bowl, scramble your eggs.
In a bigger mixing bowl, mash your banana super finely.
To the banana mixture, add your scrambled eggs. Then, slowly add in your cinnamon, vanilla extract, and sea salt. Mix and combine well.
In a buttered pan over medium-low heat add about 2 tablespoons of your pancake mixture to the pan. Allow bubbles to form and then flip.
This is optional, but I added frozen blueberries to the batter. If you choose to add chocolate or any kind of mix-in, add right before flipping.
Serve with toppings like grassfed butter, fresh fruit and raw honey and enjoy!
