Taco-Stuffed Bell Peppers

I was never a fan of bell peppers until I found myself buying them at school and not knowing what to do with them. One of my weirdest cravings is a sliced bell pepper as a snack on the side of sandwich or salad, but let's be honest, how many time can we eat that a week and not get bored? I thought of this idea when I had leftover quinoa in the fridge and ground turkey defrosting, but didn't want to start roasting vegetables after a long day of school and studying. And then this idea was born! It's super easy and really not difficult to prepare, and even the cook time isn't long. As always, you can adjust the ingredients to meet your goals and to appease your tastebuds, but this is what I used to make them taste delicious while also hitting my goals!




MACROS

CALORIES: 524 CALORIES

PROTEIN: 54.3 GRAMS

CARBOHYDRATES: 52.5 GRAMS

FAT: 11.7 GRAMS


INGREDIENTS:

- 1 large bell pepper, whichever color you prefer

- 5 ounces 99% lean ground turkey

- 120 grams Seeds of Change Quinoa and Brown Rice (with garlic)

- 28 grams shredded reduced fat mexican blend cheese


DIRECTIONS:

  1. Preheat your oven to 400 degrees.

  2. Chop the top off your washed bell pepper and then slice in half. Try getting all of the seeds and white parts of the pepper out so there is as much room within the halves of the pepper to do your stuffing.

  3. Place bell pepper halves facing downwards on a baking sheet and bake for around 5-7 minutes to get them soft before we stuff them.

  4. While the peppers are roasting, cook down your turkey meat with taco seasoning or seasonings of choice. When done, add your quinoa and brown rice. Optional: add some salsa to this mix for extra flavor.

  5. When the peppers are done, fill both halves with your turkey and quinoa mix and top with your shredded cheese of choice. I added some in the mixture and added most of the serving size on top.

  6. Bake for another 10-12 minutes or until the pepper is to your liking and the cheese is melted.

  7. Serve with salsa and whatever toppings you prefer and enjoy!


These would definitely be so good with some salsa, guacamole, and sour cream on top but unfortunately I had none of those toppings. But this was still such a delicious and filling meal that I have continued to make over and over. Pair this with some beans and/or vegetables on the side and you're golden! Hope you guys enjoy!
