Steak and Egg Breakfast Bowl

Breakfast is by far my favorite meal of the day, and I really could eat it all day long. So, I did! Instead of my normal eggs, egg whites, meat, and bread breakfast that I have, I wanted to do something high-protein, delicious and really fun.
Having time to experiment with recipes is the best. School can be so hectic and make me rely on sometimes boring meals to hit my macros, but this was absolutely INSANE.
This is definitely a more calorically dense meal, but I saved up some calories to really use the best ingredients to make this flavorful and absolutely delicious.

MACROS:
CALORIES: 730 calories
PROTEIN: 52.1 grams
CARBOHYDRATES: 64.7 grams
FAT: 30.5 grams
INGREDIENTS:
- 228 grams idaho potato
- 3.56 ounces hanger steak (weighed raw, and can use any cut of meat)
- 2 whole eggs
- 119 grams kidney beans
- 28 grams fresh avocado
- 60 grams reduced fat sour cream
- 20 grams reduced fat mexican shredded cheese
DIRECTIONS:
Marinate your steak according to preference: I did a homemade chipotle marinade (you can find that specific marinade and its ingredients under my "Crockpot Chicken Tinga" recipe).
Dice your potatoes like small breakfast potatoes, and season to your preference. I used salt, pepper, garlic powder, a dash of taco seasoning, and some chili powder.
Cook your breakfast potatoes in the air fryer at 400 degrees for around 25 minutes, or until desire crispiness
Get all of your toppings situated before you are ready to cook anything.
To cook the steak: I used a grill pan on medium-high heat. Depending on the cut of meat and the thickness of the steak, 2-3 minutes on each side should suffice for a medium rare finish. If you have a meat thermometer, you're going to want the thickest part of your steak to be 125 for rare, 130-135 for medium rare.
While your steak is in the pan, cook two eggs sunnyside up in a pan over medium heat. You can scramble or over easy your eggs, but a runny yolk for this recipe is the perfect touch.
After the steak is done cooking, let it rest COVERED for no less than 5 minutes. The key to a juicy steak is to let the juices get absorbed by the meat, and cutting it too early really dries the meat out.
Once you've waited and sliced your steak against the grain, now it's time to assemble.
Now, to assemble: potatoes, kidney beans, steak, eggs on top; then add your sliced avocado, shredded cheese, dollop of sour cream, and a nice scoop of hot salsa, and enjoy! :)
