Ground Beef Burrito Bowl

There is no fast casual dining spot college kids love more than Chipotle, myself included. Especially after a long day of classes and running around, cooking is the last thing you want to do and a heavy burrito bowl is the cure to everything.
But spending $10 on a burrito bowl frequently is not conducive to the college lifestyle, and cooking can be easy and fun, and this recipe proves that! It's easy, and most importantly, it is so tasty! I normally get chicken in my burrito bowls, but lean ground beef is an excellent source of lean protein, and when you do your shopping right, it is an affordable option. I can post so many different variations of this same dish because I will just never get sick of any of these combinations of flavors.
This meal in particular is so easy, as you can pre-cook your rice and your beef and just assemble everything + your toppings within 10 minutes. This was a fast dinner for me to prepare and it honestly hits the spot every time!

INGREDIENTS:
- 5 ounces 96% lean ground beef, weighed raw
- 150 grams jasmine rice, weighed cooked
- 110 grams frozen spicy mexican style cauliflower rice
- 14 grams fat free cheddar cheese
- 4 tablespoons fat free sour cream
- 5 ml olive oil
- taco seasoning for ground beef
- chopped romaine lettuce and tomato
DIRECTIONS:
Roughly chop romaine lettuce and one whole roma tomato, and set aside in a bowl. I do not track my lettuce or tomato, but I would say 2 cups of romaine lettuce for the base is a good amount.
Cook rice according to package instructions and set aside. Squeeze with a little lime for extra flavor.
In a separate pan, cook down your ground beef. Once browned and cooked most of the way through, add taco seasoning and a little water to help the seasoning coat the meat and stick. Once fully cooked, set aside but keep the pan over the heat.
Pour your olive oil into that same pan and add your spicy cauliflower rice mix. Let this cook on medium high for about 5-7 minutes and when done, set aside.
Now time to assemble: first add your lettuce and tomato to a big salad bowl, then your jasmine rice, seasoned ground beef, cauliflower rice, shredded cheese, sour cream, and salsa and hot sauce to top it all off!
