Greek Summer Salad

Summer is quickly approaching, though not soon enough, and there is something amazing about the variety of foods available to us throughout the summer. The fruit? Sweet and delicious. The vegetables? Versatile and nutritious. And there are so many different ways to prepare them all.
When the weather gets warmer out, there is nothing more I love than a crunchy, delicious, and refreshing salad, and this greek-inspired summer salad does just the trick.
I've been enjoying this lately on the side of steak, burgers, and grilled chicken and it adds the perfect touch to a warm protein option. The feta gives it a perfect saltiness, the vegetables are so hydrating, and the salad itself gets better as it sits.

This recipe makes enough for a family-sized side salad.
INGREDIENTS:
6 baby cucumbers (or 1 large cucumber), finely diced
6 campari tomatoes, finely chopped
1/2 of a red onion, finely diced
1 block (about 2 inches thick) of organic feta cheese
4 radishes, chopped small
1 tablespoon pure balsamic vinegar
3 tablespoons cold-pressed extra virgin olive oil
DIRECTIONS:
Chop all of your veggies extra fine and small and add to a large salad bowl.
Season generously with salt and pepper. Add your olive oil and balsamic vinegar and mix well.
If your feta is not already crumbled, chop and crumble your feta and add to your salad. I like to add this right before serving, but mixing everything before and storing all together makes all the flavors combine perfectly.
Store in the fridge for at least 1 hour and chill. Enjoy on the side of any meal, especially on the side of lamb, grilled chicken, and beef/steak.
