Greek Shrimp Salad

I love Greek salads, but every time I try and recreate any kind of salad I have had at a restaurant, it never tastes as good or as filling at home. Except for this time! I went to Honeygrow last week and got a delicious Greek chicken salad, and on Thursday, I wanted to recreate, but with shrimp. It was so delicious, even though I substituted certain ingredients and was missing some things I would have liked to have in the salad. You can add whatever you like to your salads, and I think that is why salads shouldn't be so underestimated and undervalued. You can pack them with protein, carbohydrates, and healthy fats and you're still eating low-volume, high-satiety foods that will keep you full!

CALORIES: 409 calories
PROTEIN: 37.5 grams
CARBOHYDRATES: 17.3 grams
FAT: 21.4 grams
INGREDIENTS:
- chopped romaine or salad of choice for base
- 8 ounces shrimp, peeled and deveined - handful of grape tomatoes, diced
- 2 mini persian cucumbers, chopped
- 2 tablespoons kalamata olives, chopped
- 1 ounce red onion, chopped
- 2 tablespoons banana peppers
- 1 ounce goat cheese or feta cheese
- 2 tsp olive oil + balsamic (dressing)
- sprinkle of oregano
I don't think directions are necessary for this recipe as you can assemble this in whatever manner you please. I whipped this up super fast after I was running around all day and I came home from college and it hit the spot! Hope you guys enjoy this recipe :)
