Fresh Shrimp Tostadas

Summer-inspired meals that are made with fresh and whole foods and quality ingredients are nothing short of amazing. Seafood and shellfish, especially, are among my favorite foods to eat throughout the summer that make me feel energized, satisfied, and overall just really happy. And these shrimp tostadas are truly a perfect example of a dish that not only fulfills your goals and hits you macros, but makes you feel really good!

MACROS:
CALORIES: 440 calories
PROTEIN: 48 grams
CARBOHYDRATES: 33 grams
FAT: 10.5 grams
INGREDIENTS:
- 3 white corn tortillas
- 6 ounces cooked colossal shrimp
- 28 grams reduced fat mexican blend cheese
DIRECTIONS:
Preheat your oven to 400 degrees Fahrenheit.
Line your tortillas on a foil pan or baking sheet. Spray with cooking spray and add seasonings of choice, or leave plain. I added kosher salt on mine.
Chop cooked shrimp into bite sized pieces.
Remove tortillas from oven once color of your liking. Top with shredded cheese and place them back under the heat for another 1-2 minutes so the cheese melts.
Top cheesy, crispy tostadas with chopped shrimp, fresh pico de gallo, and other toppings of your choice and enjoy! I enjoyed mine with a side of fresh pineapple (not included in overall macros listed above).
This was the easiest lunch I've made in a while, but I felt like I was eating at a restaurant! It was so fresh and healthy, but also hit any cravings I was having. Pairing it with a side of fresh pineapple or any summery fruit is definitely the way to go!
