Animal-Based Frittata

Since starting 75 Hard a little under two weeks ago, I have committed myself to a more holistic, animal-based diet. Sure, I eat ezekiel bread and indulge in pasteurized forms of dairy, but besides those negligible exceptions, I have been feeling great on this new diet. The only thing left was to come up with some fun and creative recipes!
Most of my meals look like this frittata, just deconstructed and a lot less fancy. But I figured this recipe was worth a shot and I prayed the entire time it would pan out (no pun intended) the way I had hoped...and it DID!! This was so yummy and it was a huge filling meal that hit all of the macro and micronutrients.
In the interest of not being like those typical food bloggers on the Internet that make you read a 62-page story about how their grandmother influenced them to write a simple recipe, off you go to recreate this frittata yourself :)

INGREDIENTS
4 pasture raised eggs
4 ounces cooked grassfed ground beef (minced)
1 medium sweet potato, roasted
50 grams cottage cheese
1 ounce (28 grams) raw cheddar cheese
Cooking oil of choice (butter, ghee, olive oil, avocado oil, tallow)
DIRECTIONS
Preheat your oven to 350 degrees Fahrenheit.
In a large mixing bowl, crack your four eggs and whisk until well beaten.
Add a splash of water and your 50 grams of cottage cheese and whisk again until well combined. The cottage cheese and the splash of water both work well in making the scrambled eggs creamier and fluffier.
Then, add your minced cooked ground beef and your already roasted sweet potato. I chopped my roasted sweet potatoes into penny-sized pieces so I could evenly distribute them throughout the frittata.
This part is entirely up to you, but I added my cheddar cubed into the frittata mix instead of adding later on top.
Season with sea salt.
In a greased cast iron pan or baking pan, pour your frittata mixture and ensure it is evenly spread. Bake at 350 degrees for about 20-25 minutes depending on the thickness of the egg mixture, or until it reaches your desired external crispiness. And enjoy, of course! :)
